Hot Honey Parmesan Carrots

EatingWell.com
This Hot Honey Parmesan Carrots recipe turns up the heat with hot honey and lots of crispy Parmesan cheese crisps for a savory note. To make your own hot honey, combine honey and crushed red pepper in a small skillet and bring just to a simmer over low heat. Remove from heat and let cool completely. Stir in apple-cider vinegar to taste. Try this easy method with other veggies like beets, turnips or Brussels sprouts too.

Ingredients

  • pounds Carrots
  • cup Parmesan Cheese
  • 1 Tablespoon Olive Oil
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • teaspoon Salt
  • 1 Tablepoon Hot Honey

Equipment

  • Oven
  • Baking Sheet
  • Medium Mixing Bowl

Instructions

  • Preheat oven to 400°F. Cut carrots crosswise into 1 1/2-inch pieces. Cut each piece in half lengthwise; transfer to a medium bowl.
  • Add Parmesan, oil, garlic, onion powder and salt to the carrots; toss well to coat. Arrange the carrots, cut-sides down, in a single layer on a large rimmed baking sheet. Bake until the carrots are tender and the cheese is golden brown and crispy, 25 to 30 minutes.
  • Transfer the carrots to a serving dish. Drizzle evenly with hot honey.
