- 1 pound Parsnips
- 2 Tablespoons Butter
- 1 pinch Salt
- 1 pinch Nutmeg
- Ground Black Pepper To taste
- Medium Saucepan
- Wash and peel the parsnips. Cut them into about 1-inch chunks, and place in a medium saucepan. Add water to just cover the parsnips.
- Boil over medium heat until all the liquid has evaporated- about 20 minutes
- Use a fork to mash the parsnips with butter and salt. Season with nutmeg and pepper.
