Ingredients
¾cupBlack BeansRinsed and drained
½cupVegetable Oil
2Eggs
¼cupCocoa PowderUnsweetened
⅔cupSugar
1teaspoonCoffeeInstant coffee or espresso powder
1teaspoonVanilla Extract
½cupChocolateMini chocolate chips
⅓cupAll-Purpose Flour
½teaspoonSalt
Instructions
Preheat the oven to 350°F.
Grease a 9x9-inch baking pan.
In the blender, puree the beans and ½ cup of vegetable oil.
Add the eggs, cocoa, sugar, coffee, and vanilla extract.
Melt half the chocolate chips and add to the blender.
Blend on medium-high until smooth.
In a small bowl, mix the flour, baking powder, and salt, and add the combination to the blender. Pulse the blender until the ingredients are just mixed.
Stir the remaining chocolate chips into the blender. Pour the mix into the greased baking pan.
Bake until the surface looks somewhat matte around the edges, and still a bit shiny in the middle- about 20 minutes.
Remove from oven, and let cool at least 15 minutes before cutting and removing from pan.
