- 1/4 cup Vegetable Oil
- 1/8 cup Rice Vinegar
- 1/8 cup Lemon Juice
- 1 Tablespoon Honey
- 1 Tablespoon Mustard
- 1 clove Garlic Chopped
- 1 cup Spinach
- 1 cup Spring Lettuce Mix
- 2 Pears Cored and chopped
- 2 Apples Cored and chopped
- 1 Green Onion
- 6 ounces Feta Cheese
- Black Pepper To taste
- Salt To taste
Mix vegetable oil, rice vinegar, lemon juice, honey, mustard, chopped garlic, salt, and pepper. Set aside.
In a large bowl combine baby spinach, spring mix, pears, apples, and green onions. Pour dressing over salad and serve. Serve cheese separately.
