Peel apples and cut away from core (for added texture and fiber, leave skins on). Chop into small chunks. Combine with water in a saucepan, place lid on saucepan.
Cook over medium heat for 20 minutes. Remove from heat, add cinnamon, mash to preferred consistency with potato masher or hand mixer.
Let cool, and serve. Applesauce will keep in the fridge for 2 weeks, or in the freezer for 2 months.
