1canApricot Halves15 ounces, drained
1Jalapeño PepperOptional, roughly chopped
¼cupCilantroFresh, roughly chopped
¼cupRed OnionRoughly chopped

Instructions
Drain the apricots and pat them dry with a paper towel.
Dice the apricots and finely chop the remaining ingredients. Stir in a medium bowl to combine.
Notes
Alternatively, place all the ingredients in a blender or food processor, and pulse a couple of times, until the apricots are broken into small chunks and the salsa is fairly smooth. Taste and add more salt, lime juice, or pepper if needed.
Serve with corn tortilla chips, use it as a topping for white fish, or use it as a marinade for pork or chicken.
