Cheesy Broccoli Chicken Bake

Ingredients

  • 1 pound Chicken Breasts
  • 2 cloves Garlic Or garlic powder
  • ½ teaspoon Salt
  • ¼ teaspoon Paprika
  • Pepper To taste
  • cups Milk Low-fat
  • 1 cup Chicken Broth Low-sodium
  • 1 cup Rice
  • 2 ounces Cream Cheese
  • 2 ounces Cheddar Cheese
  • 4 cups Broccoli

Instructions

  • Preheat the oven to 400. Lightly grease the baking dish.
  • Cube the chicken breast. Season with the minced garlic, paprika, and pepper. Stir to evenly coat. Add to the baking dish.
  • Add the rice, chicken broth, milk, cream cheese, cheddar cheese, and broccoli.
  • No need to stir, but make sure the rice is fully submerged.
  • Bake for 15 minutes, then remove from the oven and stir if using 4 separate dishes. Add back to the oven and cook for about 10 more minutes, until golden brown on the top, chicken is cooked through and rice is cooked.
    If baking in one large pan, it will need to cook longer (45 minutes to one hour, stir an extra time or two throughout cooking).
