In a bowl, toss plantain slices with olive oil, salt, and cayenne pepper until well mixed.
Line a baking sheet with parchment paper and place chips in a single layer.
Bake for 15-20 minutes, flipping once halfway through at about 8 minutes.
Plantain chips are done when they start to brown around the edges. Remove and serve. They are best served warm but can be cooled on a paper towel and will keep up to one day.
